Toolangi Pinot Noir is handpicked from low cropped Pinot Noir vines, planted in 2001 on the estate vineyard at Dixons Creek, Yarra Valley.
The grapes are kept as whole berries – destemmed but not crushed, with a portion left as whole bunches in some vintages. After a short cold soak, they are wild yeast fermented with minimal plunging.
The wine is pressed to French oak after several weeks on skins, where it undergoes natural malolactic conversion then is sulphured on lees. It remains in oak for 8-10 months, then racked just prior to bottling.
Pale red, Toolangi Pinot Noir is medium bodied with bright red fruit flavours. Fresh, fine acidity and gentle tannins carry the taste long and true. Cellaring potential is five years.
